2 ¼ c. flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 ½ c. sugar (plus 1/3 c. for
rolling)
2 oz. cream cheese, cut into 8 pieces
6 Tbsp. melted butter, still warm
1/3 c. vegetable oil or melted coconut
oil
1 large egg
1 Tbsp. milk
2 tsp. vanilla extract
Preheat oven to 350 degrees. Whisk
flour, baking powder, baking soda and salt together in a bowl and set aside.
Place cream cheese and 1 ½ cups sugar in a mixer and mix in melted butter. Mix in
oil. Mix in egg, milk and vanilla until smooth. Gently fold in flour mixture
until soft, homogenous dough forms.
Place remaining 1/3 c. sugar in a
bowl and roll dough balls of 2 tablespoons into the sugar until fully coated.
Place 2 inches apart on a parchment lined baking sheet. Using the bottom of a
measuring cup, press the cookies flat (dipping in sugar also may help it not
stick to the cookies). Bake cookies for 11-13 minutes. Let cookies cool on pan
for 5 minutes, then transfer to cooling rack. Let cookies cool completely
before serving. Makes about 2 dozen cookies.
For fun, substitute colored sugar for
the 1/3 cup sugar for rolling.
