1 lb. pork chopped into ½ inch cubes
2 Tbsp.
vegetable or olive oil
2 Tbsp. sesame
oil
½ tsp. salt
½ tsp. pepper
½ tsp. ground
ginger
1 ½ cups
frozen peas and carrots
1 Tbsp.
minced garlic
4 eggs,
beaten
½ cup green
onions, chopped
4 cups rice,
cooked
¼ cup soy
sauce
Place first
six ingredients into a large heated skillet or wok on medium-high heat. Cook
5-7 minutes or until pork is cooked through. Reduce to medium heat and move
pork out of pan to a bowl. Add peas and carrots to skillet and saute 2 minutes
to heat through. Stir in garlic and cook one minute. Push veggies to one side
and cook eggs in the other side of skillet. Move heat to medium-low and return
pork to skillet. Add rice and green onions. Stir to combine. Drizzle with soy
sauce and cook 2-3 minutes to heat through.
